THE RECIPE
vanilla cake with strawberry mascarpone buttercream
INGREDIENTS
VANILLA CAKE
2 2/3 cup all-purpose flour
1 cup white sugar
1 tablespoon baking powder
1 tablespoon vanilla extract
1 teaspoon salt
3 large eggs
3/4 cup milk
3/4 cup vegetable oil
fresh blueberries and strawberries for garnish
STRAWBERRY MASCARPONE BUTTERCREAM
8 ounces mascarpone or cream cheese, softened
2 sticks salted butter, softened
3 cups powdered sugar
2 teaspoons vanilla extract
1 cup fresh chopped strawberries
INSTRUCTIONS
Preheat the oven to 350 degrees F. Grease a 9-inch cake pan and line with parchment paper.
Mix flour, sugar, baking powder, vanilla extract, and salt together in a bowl. Add eggs, milk, and vegetable oil. Mix by hand or use an electric mixer on low speed until smooth. Add more flour if batter is too runny. Pour into the prepared pan and bake for about 30-35 minutes or until a toothpick comes out clean.
Meanwhile make the frosting. Add the cream cheese and butter to a large mixing bowl. Using an electric mixer beat until the mixture is light and fluffy, about 2 minutes. Add the powdered sugar and vanilla. Beat another 2-4 minutes or until the frosting is light and fluffy. Beat in the strawberries.
Remove the cake from the oven and let it cool, 15 to 30 minutes.
Place the cake on a serving plate or cake stand. Spread a little frosting. Top with fresh blueberries and strawberries. Frost the cake sides. Serve and enjoy!
