THE RECIPE
spiced pepper chickpea bowl
INGREDIENTS
2 cups cooked brown or white rice
1 yellow onion, diced
1 tablespoons ground cumin
1/2 tablespoon ground coriander
3/4 teaspoon cayenne pepper
1 1/2 cups canned diced tomatoes
1 red pepper, diced
Two 15-ounce cans chickpeas, drained and rinsed
Salt and ground pepper
Feta and parsley, for serving
INSTRUCTIONS
Add the onions and pepper and saute over medium heat until tender, about 5-7 minutes.
Add the cumin, coriander and cayenne and cook, stirring, for 1 minute. Add the tomatoes and simmer over medium heat until thickened, about 6 minutes. Add the chickpeas and simmer until the chickpeas are flavored, about 8 minutes.
Season the chickpeas with salt, garnish with feta and parsley. Distribute the rice evenly into bowls. Serve and enjoy!
