silver dollar pancakes

OK just giving you a quick, short and sweet story of what not to do. First time I tried to make these, I had a freakin' field day with the blueberries; I put way (like wayyyy) too much blueberries in the batter. I.Went.To.Town. The pancakes came out blue (gross). I'm telling you this so you can learn from my mistake (you're welcome): don't fold the blueberries into the batter, instead sprinkle a few blueberries on top of the pancakes while they are cooking. See the sad looking picture below for a visual.


Don't go overkill with the butter...

Also, I put way too much butter the first time. Just take a paper towel coated in butter and lightly grease skillet.

*Borat voice* It'ssss a successss

Second time around, I put the blueberries on top of the pancakes while they were cooking.


Note.

I only had a few blueberries left when I made this the second time, so I just some blueberry pancakes and some plain pancakes.

It's all about the bubbles.

When you see bubbles appear on top, flip and cook until browned on underside, 1 minute.

And now...the toppings.

Top with fresh blueberries, bananas, anything you want! Drizzle some syrup on top, serve, and enjoy!

THE RECIPE

silver dollar pancakes

INGREDIENTS

  • 1 cup all-purpose flour (spooned and leveled)

  • 1 teaspoon granulated sugar

  • 1 1/2 teaspoons baking powder

  • 1/4 teaspoon kosher salt

  • 1 cup whole milk

  • 2 tablespoons unsalted butter, melted

  • 1 large egg

INSTRUCTIONS

  1. In a small bowl, whisk together flour, sugar, baking powder, and salt.

  2. In a medium bowl, whisk together milk, butter, and egg.

  3. Add flour mixture to milk mixture and whisk until just moistened (batter should have some lumps).

  4. Heat a large nonstick or cast-iron skillet over medium heat.

  5. With a paper towel coated in butter, lightly grease the skillet.

  6. Use a tablespoon to drop batter into the skillet. Cook until some bubbles appear on the tops, about 2 minutes.

  7. Flip and cook until slightly browned on the other side, about 1 minute.

  8. Wipe the skillet clean between batches and repeat with more butter and batter. Serve with desired toppings and enjoy!
