INGREDIENTS
1 loaf ciabatta bread, halved lengthwise
1-2 tablespoons pesto
1/4 cup fresh basil, roughly chopped
6 slices salami
6 slices prosciutto
6-10 slices pepperoni
6 slices provolone cheese
8 ounces fresh mozzarella cheese, torn
1 fire roasted red pepper, sliced
1 cup baby arugula
INSTRUCTIONS
Preheat the oven to 400 degrees F.
Lay the bottom piece of the ciabatta bread cut side facing up on a baking sheet. Spread the pesto evenly over the bread. Layer the basil, salami, prosciutto, and pepperoni. Add the provolone and mozzarella. Transfer to the oven and bake for 10 minutes, or until the cheese begins to melt. Remove from the oven and add the arugula, red pepper, and top half of the bread. Cover the sandwich with foil and put back in the oven to bake for another 10 minutes. Remove the foil and bake for another 5-10 minutes, or until the bread is toasted.
Remove from the oven and let is sit for 5 minutes. Slice into 4 larger or 8 smaller sandwiches. Serve and enjoy!
