THE RECIPE

grilled vegetable salad with feta

INGREDIENTS

  • 2 medium zucchini, ends trimmed, quartered lengthwise

  • 1 large red onion, ends and skin removed, sliced into 3 to 4 large intact-rings

  • 2 cups cherry or grape tomatoes, halved

  • 3 large heirloom tomatoes, sliced

  • 2 tablespoons extra-virgin olive oil

  • kosher salt and black pepper, to taste

  • basil leaves, for garnish

  • 4 slices sourdough bread

INSTRUCTIONS

  1. Preheat a grill or grill pan to medium-high heat and brush the grates with oil. Grill the vegetables for 2-3 minutes or until light char marks appear, flip and grill another 2-3 minutes. Remove from the grill and set aside.

  2. Assemble vegetables on a large serving platter and drizzle olive oil on top. Top with crumbled feta and basil. Serve and enjoy!
