THE RECIPE

Greek Lemon Oregano Skillet Chicken

INGREDIENTS

  • 4 chicken cutlets, or 2 boneless chicken breasts, sliced in half horizontally

  • 2-3 tablespoons olive oil

  • 3 shallots, cut into 1-inch-thick pieces through the stem

  • 2 cloves garlic, smashed and roughly chopped

  • 5 tablespoons Greek oregano

  • 1/3 cup dry white wine

  • 3 tablespoons unsalted butter, cut into pieces

  • 1 1/2 cups chicken broth or stock

  • Juice of one lemon

  • Salt + pepper

  • Feta, arugula, roasted potatoes, rice for serving or anything you desire!

INSTRUCTIONS

  1. Preheat oven to 350 degrees F.

  2. Season the chicken all over with salt and pepper. Heat the olive oil in a large cast iron skillet over medium-high heat. Working in batches, if necessary, brown the chicken pieces on both sides, about 5-7 minutes. Remove from the pan and set aside.

  3. Reduce the heat to medium and stir in the shallots, garlic, and 3 tablespoons oregano; cook just until softened, about 5 minutes. Add the browned chicken back to the pan and the add the butter, wine, chicken broth, and lemon juice. Transfer to the oven and bake until chicken is cooked through, about 45 minutes. Garnish with the remaining 2 tablespoons of oregano. Serve with feta, broccolini, roasted potatoes, rice, or anything you desire. Enjoy!
