GF/DF Double Chocolate Muffins

THE RECIPE

GF/DF Double Chocolate Muffins

INGREDIENTS

  • 2 cups almond flour (or almond meal)

  • 1/4 cup unsweetened cocoa powder

  • 1/4 teaspoon salt

  • 1/2 teaspoon baking soda

  • 1/4 cup oil

  • 1/4 cup maple syrup

  • 3 large eggs, room temperature

  • 1/2 cup dairy-free dark chocolate chips

INSTRUCTIONS

  1. Preheat oven to 350 degrees F. Line a muffin pan with 12 paper liners, set aside.

  2. In a large mixing bowl, whisk the almond flour, cocoa, salt, and baking soda.

  3. Add in the oil, maple syrup, and eggs and mix until well-combined.

  4. Fold in the chocolate chips.

  5. Spoon the batter evenly into the paper liners and bake for 18-20 minutes or until the center is set.

  6. Remove from the oven and let the muffins cool for 10 minutes before serving. Enjoy!
