THE RECIPE Fluffiest Eggs with Chive Goat Cheese Toast
INGREDIENTS
2 slices fresh sourdough bread, toasted
Handful of fresh arugula
1 teaspoon olive oil
1 teaspoon lemon juice
FLUFFIEST SCRAMBLED EGGS
4 large eggs
1 tablespoon salted butter
1 teaspoon full fat plain Greek yogurt
Pinch of salt and freshly ground black pepper
CHIVE GOAT CHEESE
3 ounces goat cheese, room temperature
2 tablespoons scallions, finely chopped
1 teaspoon lemon juice
INSTRUCTIONS
In a small bowl, mix together the scallions, goat cheese, and lemon juice. Set aside.
Crack the eggs into a saucepan. Add the butter. For smaller batches, use a 2-to-1 eggs-to-butter ratio. Put the pan on high heat.
Stir continuously with a rubber spatula (don't whisk!) making sure to scrape the bottom of the pan.
After 30 seconds, take the pan off the heat. Keep stirring. After about 10 seconds, put back on the heat. Repeat for 3 minutes.
In the last minute, season the eggs lightly. For the extra creamy texture, stir in the crème fraîche/sour cream/Greek yogurt. Remove from heat and set aside.
Spread half of the goat cheese on each slice of bread. Transfer the eggs on top. Toss the greens with lemon juice and olive oil, and then pile the greens on top of the eggs. Serve and enjoy!
