THE RECIPE

citrus herb chicken with peach salsa

INGREDIENTS


CITRUS HERB MARINADE

  • 2 boneless skinless chicken breasts

  • 1/3 cup lime juice

  • 1 tablespoon honey

  • 1 tablespoon olive oil

  • 1 tablespoon fresh thyme, finely chopped

  • 2 teaspoons fresh chopped rosemary or 1/2 teaspoon dried rosemary

  • 1 garlic clove, minced or grated

  • 1/2 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

PEACH SALSA

  • 4 ripe peaches, diced

  • 1/2 cup fresh basil, chopped

  • 1 cucumber, seeded and finely diced

  • 1 medium red or yellow onion, finely diced

  • 2 tablespoons lime juice

  • 1 1/2 teaspoons salt, or to taste

  • 1/4 teaspoon freshly ground black pepper, or to taste

INSTRUCTIONS

  1. Marinate the chicken. Place the chicken in a resealable plastic bag set in a shallow dish. Stir together the marinade ingredients. Pour the marinade over the chicken; seal the bag. Marinate in the fridge for 2 to 4 hours, turning the bag occasionally.

  2. Make the salsa. In a medium-sized bowl, stir together all of the ingredients for the salsa. Set aside.

  3. Preheat the grill, grill pan or cast iron skillet to medium-high heat and brush the grates with oil. Grill the chicken for 5-8 minutes per side or until the chicken is cooked through. Remove the chicken from the grill and let it rest for about 5-10 minutes. Thinly slice the chicken.

  4. Serve the chicken with the peach salsa, top with avocados and basil. Enjoy!
