Cinnamon Roll Cookies


Ingredients

For the Filling:

  • 6 Tablespoons salted butter, softened

  • 3/4 cup brown sugar

  • 1 1/2 Tablespoons ground cinnamon

For the Dough:

  • 2 sticks salted butter

  • 3/4 cup granulated sugar

  • 2 eggs

  • 2 teaspoons vanilla extract

  • 3 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 3/4 teaspoon salt

Instructions

  1. Preheat oven to 350F.

  2. In the bowl of a stand mixer fitted with a paddle attachment, mix the ingredients for the filling. Roll into small balls and freeze.

  3. Beat the butter and sugar. Add the eggs and vanilla and mix to combine. Add the flour, baking soda, salt, and mix to combine. Fold the cinnamon marbles into the dough.

  4. Scoop and roll the dough and place on a baking sheet. Transfer to oven and bake for 8 minutes.
