THE RECIPE

cauliflower gnocchi with sweet italian chicken sausage

INGREDIENTS

  • 1 bag Trader Joe’s cauliflower gnocchi

  • 14 ounces chicken sausage, cut into 1/2-inch slices

  • 1/4 cup grated or shaved parmesan

  • 2 tablespoons extra-virgin olive oil

  • 1-2 tablespoons tomato paste

  • kosher salt and black pepper, to taste

INSTRUCTIONS

  1. Cook the sausage. Heat the oil in a large skillet over medium-high heat. Cook the sausage for 5-7 minutes, or until lightly browned.

  2. Cook the gnocchi according to package directions for the sauté method. Add the tomato paste and stir to combine.

  3. Add the gnocchi and sausage to a large serving bowl, mixing until well-combined. Top with parmesan before serving. Enjoy!
