Ingredients
1 lb pizza dough (homemade or store-bought)
3 tablespoons extra virgin olive oil
3/4 cup ricotta cheese
1 cup fresh mozzarella cheese
1 large yellow onion, thinly sliced
1 1/2 cups shiitake or baby bella mushrooms, sliced
Fresh basil
Salt and pepper, to taste
Instructions
Caramelize the mushrooms and onions: In a large skillet over medium high heat, heat the olive oil. Add onion; cook 10-15 minutes, stirring occasionally, until onion softens and begins to brown. Add mushrooms; cook an additional 5-7 minutes or until softened and also beginning to brown. Remove from heat.
For the Pizza: Preheat oven to 450 degrees F.
On a lightly floured surface roll the dough thin. Transfer to an oiled baking sheet, drizzle with olive oil. Bake for 8 mins until lightly baked. Remove from oven. Dollop the ricotta evenly over the crust and gently spread it out. Top with the mozzarella, mushrooms and onions and put it back into the oven for about 8-10 minute until the cheese has melted.
Remove from the oven, top with fresh basil and season with salt and pepper. Serve immediately and enjoy!
