Buttermilk Biscuit Breakfast Sandwich

INGREDIENTS


For the fluffy goat cheese scrambled eggs:

  • 4 eggs

  • 1 tablespoon full fat plain Greek yogurt

  • 3 ounces goat cheese

  • 1 tablespoon salted butter

  • handful of chopped green onion or chives

  • pinch of salt and pepper

For the rest of the sandwich:

  • 4 buttermilk biscuits, halved

  • 1 avocado, smashed using a fork

  • 1 medium sweet potato

  • pinch of crushed red pepper flakes

INSTRUCTIONS

  1. Crack the eggs into a saucepan and add the butter. Place the pan on high heat.

  2. Stir continuously with a rubber spatula (don't whisk!) making sure to scrape the bottom of the pan. After 30 seconds, take the pan off the heat. Keep stirring. After about 10 seconds, put back on the heat. Repeat for 3 minutes.

  3. In the last minute, season the eggs lightly. For the extra creamy texture, stir in the Greek yogurt and goat cheese. Add the chopped green onion/chives and remove from heat and set aside.

  4. Meanwhile, microwave the sweet potato on high for about 3-4 minutes, or until fork tender. In a small bowl, mash the sweet potato and set aside.

  5. Spread a tablespoon of sweet potato each biscuit half, then layer with the smashed avocado, scrambled eggs, and a pinch of crushed red pepper flakes. Serve and enjoy!
