Breakfast Tostadas

INGREDIENTS

  • 3 eggs

  • 3 teaspoons extra-virgin olive oil, divided

  • 4 slices cooked bacon

  • 3 tortillas

  • Refried beans, homemade or store-bought

  • 1/4 cup chopped red onion

  • 2 tablespoons lime juice, about 1 medium lime

  • 1/2 cup Cotija cheese crumbled

  • Sea salt and freshly ground black pepper

  • Pinch of crushed red pepper flakes

  • Optional Toppings: sliced avocado, hot sauce, chopped green onion green, salsa, cilantro

INSTRUCTIONS

  1. In a small skillet over medium heat, warm each tortilla individually, flipping as necessary. Spread the refried beans over each tortilla and then top with bacon slices. Set aside.

  2. Fry the eggs: In the same skillet over medium heat, pour in 1 teaspoon olive oil and wait until it’s simmering. Carefully crack an egg and pour it into the skillet without breaking the yolk. Fry the egg, lifting and tilting the pan occasionally to redistribute the oil, until whites are set and yolk is cooked to your preference. Place the fried egg on top of prepared tortilla and repeat with remaining eggs.

  3. Top each prepared tortilla with red onion, hot sauce, cotija cheese, red pepper flakes, and anything else you desire! Serve and enjoy!
