THE RECIPE
balsamic fig prosciutto goat cheese flatbread
INGREDIENTS
12 ounces pizza dough, homemade or store-bought
all-purpose flour, for dusting
1-2 ounces thinly sliced prosciutto ham, roughly torn
2 1/2 tablespoons extra virgin olive oil
kosher salt & fresh ground pepper
1/4 cup water
1/3 cup balsamic vinegar
1 1/2 tbsp brown sugar
8 ounces goat cheese
3 ripe figs, sliced
1 cup arugula
INSTRUCTIONS
Preheat oven to 450 degrees F. Lightly flour a baking sheet.
Roll/push out the pizza dough on a floured surface into an oval about 1/4-1/3 inch thick. Transfer the dough to the prepared baking sheet. Brush the dough with 1 1/2 tbsp olive oil and sprinkle with salt and pepper. Layer the dough with figs, goat cheese, and prosciutto. Bake the flatbread for about 12-15 minutes, or until golden and cooked through.
Meanwhile, prepare the balsamic reduction. Heat the balsamic vinegar in a small saucepan over medium heat. Simmer until it has reduced by half and has thickened. Remove from heat and stir in the brown sugar. Set aside to cool.
Top the flatbread with arugula and additional goat cheese, if desired. Drizzle with the balsamic reduction, serve, and enjoy!
