Ingredients
3 bagels, split in half
6 eggs
6 bacon strips, cut in half
1/4 cup cheddar or parmesan cheese, shredded
salt and pepper, to taste
Instructions
Place bacon strips on a sheet pan in a single layer. Transfer to a cold oven. Turn on the oven to 400°F. Bake 10 minutes. Remove from oven and transfer bacon to a paper towel lined plate.
While the bacon cooks lightly, take each bagel and cut it in half. Cut out a larger hole from the middle of each bagel.
On a clean sheet pan, lay down a sheet of parchment paper. Arrange the bagel halves in a single layer, cut side down.
Add the bacon to the bottom of each well so that it fully covers the hole, making an 'X' shape.
Crack an egg on top into each hole. Sprinkle cheese, salt, and pepper over the bagels and eggs.
Transfer to oven and bake in the oven for 10 to 13 minutes, or until the eggs are set. Serve immediately and enjoy!
