INGREDIENTS
3 slices sourdough bread
3 slices bacon
1 avocado, smashed
3 large eggs
1 tablespoon unsalted butter at room temperature, for spreading
Kosher salt and black pepper
Pinch of crushed red pepper flakes
Arugula, feta, chopped scallions for topping
INSTRUCTIONS
Preheat oven to 400 degrees F (200 C). Place bacon in a single layer onto a baking sheet. Place into oven and bake until cooked and crispy, about 12-15 minutes. Transfer to a paper towel-lined plate and crumbled.
Meanwhile, lightly grease a baking sheet or coat with nonstick spray. Using a 3-inch biscuit cutter, make a hole in the center of each bread slice. Butter one side of the bread slices. Place the bread onto the prepared baking sheet, buttered side down. Gently crack the eggs into each hole and keeping the yolk intact. Sprinkle with feta and season with salt and pepper, to taste. Place into oven and bake until the egg whites have set, about 12-15 minutes.
Spread a spoonful of the smashed avocado onto each toast.
Serve immediately, garnished with scallions, feta, and arugula, if desired. Enjoy!
