How to Make Authentic Avgolemono Soup.
The name of this classic Greek soup comes from its two main ingredients: egg (avgo) and lemon juice (lemono). The key to this soup is tempering the egg and lemon mixture by slowly adding hot stock and then whisking constantly to prevent the eggs from curdling. You then stir the mixture into the soup, which becomes all velvety lush lemony goodness.
Avgolemono (pronounced av-gho-lé-mo-no) actually refers to the Greek sauce made from eggs, lemon, and warm broth. In Greek cuisine, avgolemono is commonly added to soups for thickening, the sauce is used to dress up everything from roasted vegetables to fish dishes.
Ingredients
1/2 teaspoon pepper
2 teaspoons salt
3 celery ribs
4 medium carrots, peeled
1 large or 2 small yellow onions, whole and peeled
1 bay leaf
1 whole chicken, skin on
4 quarts water
1/2 cup dried orzo
2 eggs at room temperature, egg whites and yolks separated
Juice of 2 lemons
Step 1: Prepare the Broth.
Rinse the chicken well. Place the chicken in a large pot with 4 quarts of water. Bring to a boil. Reduce heat to a simmer, skim the froth from the top. Add the vegetables, onion, bay leaf, salt and pepper. Let simmer for about 1 hour and 30 minutes.
Step 2: Strain the Broth.
Remove from heat, strain the broth, and discard the vegetables. *Note: if you want to add vegetables to the soup, add the vegetables back to the pot after straining the broth.
Step 3: Add the Orzo.
Bring the broth to a boil and add the orzo. Reduce heat to medium and cook for about 20 minutes. After 20 minutes, remove the pot from heat.
Step 4: Make the Egg-Lemon Mixture.
In a bowl, beat the egg whites until frothy. Add the egg yolks and lemon juice. As you continue to mix, very slowly add a 1/4 cup or half a ladle of broth to the egg-lemon mixture.
Step 5: Incorporate the Egg-Lemon Mixture.
Take the egg-lemon mixture and very slowly pour it back into the pot while simultaneously stirring the pot.
Step 6: Serve and Enjoy.
Ladle into bowls. Serve and enjoy!
