THE RECIPE

20-minute pesto sausage and rice

INGREDIENTS

  • 1 cup brown or white rice, quinoa works too!

  • 1/2 cup homemade or store-bought pesto

  • 14 ounces chicken sausage, cut into 1/2-inch slices

  • basil leaves, for garnish

  • 1/4 cup grated or shaved parmesan

  • 2 tablespoons extra-virgin olive oil

  • kosher salt and black pepper, to taste

INSTRUCTIONS

  1. Cook rice according to package directions.

  2. Cook the sausage. Heat the oil in a large skillet over medium-high heat. Cook the sausage for 5-7 minutes, or until lightly browned.

  3. Add the rice, sausage, and pesto to a large serving bowl, mixing until well-combined. Top with parmesan and basil before serving. Enjoy!
